HEARTY BREAKFAST BOWL
4 cups cooked and cooled whole grain brown rice blend *see note
1-½ cups raw or almond milk
1/2 tsp cinnamon
1/2 tsp purevanilla extract
2 Tbsp honey
3/4 cup chopped dried fruit
1/2 cups toasted sliced almonds
Pinch of salt
~ Bring milk, cinnamon, vanilla, honey and salt to boil
~ Add rice and ½ cup of the dried fruit
~ Cook 3-5 minutes, stirring occasionally, until 2/3 of the milk is absorbed
~ Top with remaining fruit and almonds
~ Drizzle with additional honey and cinnamon if desired.
* I use Lundberg Jubilee gourmet blend of whole grain brown rice. Kashi 7 whole grain pilaf or similar can be substituted.
