SWEET POTATO STEW
This stew is quick, easy and packs tons of flavor! 
Make it heartier by adding ham to it.

1 onion, chopped
2 minced garlic cloves
1 qt chicken stock, preferably homemade
2 potatoes (med-large), peeled and diced
2 sweet potatoes, peeled and diced
1 can (14.5 oz) fire roasted tomatoes, undrained *see note
1 can (14.5 oz) petite diced tomatoes, drained
Heaping tsp of cinnamon, cumin, curry powder and salt
1/4 tsp cayenne pepper
1/4 cup natural chunky or smooth peanut butter
Optional: ham

~ Saute onion and garlic in extra virgin olive oil or coconut oil
~ Add remaining ingredients and bring to boil
~ Simmer 15 minutes or until potatoes are tender

* NOTE: if you cannot find fire roasted diced tomatoes just use 2 cans of petite diced tomatoes, only draining 1 can
