1 cup rolled oats
1 cup uncooked buckwheat (or steel cut oats, oat goats, uncooked hot cereal mix, etc)
1/3 cup uncooked quinoa (can mix ½ red; ½ regular quinoa)
2 Tbsp chia seed
1/2 cup raw almonds, coarsely chopped
1/4 cup pistachios
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
1/4 cup raw cashews, coarsely chopped
1/4 cup shredded, unsweetened coconut
2 tsp cinnamon
1 cup dried fruit
1/2 cup pure maple syrup
1/2 cup coconut oil, melted
~ Combine all dry ingredients in large bowl and mix well
~ Add the coconut oil and maple syrup and stir well
~ Spread onto a parchment lined baking sheet
~ Bake 50-60 minutes at 225 degrees
~ Let cool
* Good served as a cereal with milk
* Can add flax seed as part of the 1 cup buckwheat
