GARLIC KALE with BELL PEPPERS and PINE NUTS
1 bunch kale, tough stems removed, leaves chopped
2-4 cloves garlic, minced
2 Tbsp extra virgin olive oil
2 Tbsp pine nuts
1 red bell pepper, cut into strips
Sea salt and pepper to taste
~ Wash kale and allow water droplets to remain on leaves
~ In a small dish, add garlic and oil, stir and allow to sit
~ Heat a skillet over medium-low heat and toast pine nuts until golden and fragrant, stirring
~ Remove nuts from pan
~ Add garlic and oil to pan and sauté stirring once to flavor the pan
~ Add bell pepper and season with salt and pepper
~ Sauté peppers for about 2 minutes and add kale
~ Stir briefly, cover pan with a lid, and turn heat to low
~ Cook for about 2 minutes, then stir
~ Cover again, turn off heat, and allow veggies to steam in pan for 2 minutes
~ Toss the pine nuts back in and serve
